Sharp Aged Colby
Mini Pear & Sharp Colby Bites - Nancy Imes
* 1 can (8oz) Pillsbury Cresent Recipe Creations refrigerated flaky dough sheet
* 1 Pear, peeled and finely chopped (about 1 1/2 cups)
* 1 Tbsp packed brown sugar
* 1/8 tsp ground red bell pepper and garlic seasoning
* 1 Tbsp Honey
* About 1/2lb chunk of Grandp's Sharp Colby Cheese cut into 24 1/2" cubes
* 1/3 cup finely chopped pecans
Heat Oven to 375*
Grease or spray 24 mini muffin cups. Unroll dough on work surface, press into 12"x8" rectangle. Cut into 6 rows by 4 rows making 24 squares. Gently press squares into mini muffin cups (dough will not completely cover inside of cup, do not press too much)
In a small bowl, mix pear, brown sugar, red pepper and garlic seasoning and honey. Place one cheese cupe in each cup. Top with one heaping teaspoon pear mixute. Sprinkle with pecans.
Bake 15-20 minutes or until edges are deep golden brown. Cool 5 minutes. Remove from muffin pans and serve warm.
